Shabbat Dinner with Friends

This past Friday April and I were invited to one of her coworkers apts for Shabbat dinner.  I’d never been to a Shabbat dinner before, and I was very happy to be able to attend this one.  I learned a little more about the Jewish faith and well… this Shabbat dinner sharing time with friends and family is an envious thing.  We had a good time and enjoyed the large buffet spread (which I forgot to document) of taco fixings including a squash and poblano pepper filling, as well as a cabbage black bean tomato salad as well as big bowls of guacamole, cheese, pico de gallo, onions and chips.  Even after everyone had eaten several tacos and gone back for seconds there was still a large amount of the cabbage salad left.  So… Hollen sent us home with some, which we quickly incorporated into our meals for the rest of the weekend.  We certainly got into the Mexican style.

hollen-002Saturday breakfast saw some of the cabbage salad work it’s way into a side dish for the fried eggs atop burrito fixings (an additional leftover treat brought home by April). 

hollen-005And the rest of it made an appearance at dinner mixed in with some greens as a a salad for some chicken quesadillas.  Do you ever forget about some classic meals you used to eat all the time, and decide to bring them back with a fury??  Fajitas are this way for us.  We had them for dinner both Saturday and Sunday nite.  🙂
