French Sable Cookies: There used to be sweets in my life.

Jumping back in time, I want to recollect about some of the best cookies I ever made.  They are French Sable Cookies with recipe from Cooks Illustrated Magazine.

French Sable cookies, are a butter cookie that are crisp and crumbly.  They were so tasty, and in the pretzel form.  Ultra Cute!!  Sable translates to “sand” which refers to the crumbly texture of the French Sable cookie.  According to Cooks Illustrated problems with making the cookie crumbly come from the amount of moisture that is in the cookie.  Too much moisture and you lose the texture.  So… Cooks Illustrated gets around this by hard boiling an egg and adding only the yolk.  You remove the moisture ahead of time, and therefore it does not interfere with the distribution of sugar throughout the cookie.

To make them look like pretzels they were washed with egg white and sprinkled with turbinado sugar or Sugar in the Raw.



Chicken Bouillabaisse and Chick Peas with Feta and Mint

Chicken Bouillabaisse made with drumsticks and thighs.  Traditionally a bouillabaisse is a fish stew boiled over low heat made up of a variety of fish, seafood and vegetable.   This spin on the recipe uses chicken as it’s main ingredient instead of fish.  Which makes it more me friendly 🙂 The sauce is often flavoured with orange peel and saffron, both of which we incorporated into the dish and it turned out quite tasty.

One of the new things I’ve become more accustomed to, which this dish employed is starting a meal on the stove top in a skillet that is oven safe and at some point during the cooking you put the whole pan into the oven to finish cooking.  This is how you can start out by sauteing onions, adding in your spices and flavouring, add broth tomatoes and broth, bring to a boil, add the chicken and stick it into the oven to finish cooking the chicken.  

Accompanying the dish we made Garlicky Beans with Feta and Mint.  We get a lot of our produce from the local Devon Market, which really has stellar produce.  Ready to eat.  Fresh and tasty.  But in addition to produce they have a deli counter that sells fresh feta which is really quite delicious.  So we stopped to get our Feta there this week.  Mmm…  The compliment of the mint and feta was quite refreshing and very tasty.  I would highly recommend these beans as a side, now if I could only find the recipe.  Looks like they are only available in print version right now.  We’ve been using the new Bon Appetite Fast Easy Fresh Cookbook a lot.  And everything is so super tasty.  I highly recommend it.
